The Kershaw Deconstructed Lake District Bokkeveld Shale CY96 unfolds a distinctive profile characterized by its vibrant citrus notes, a reflection of the unique Bokkeveld shale terroir. Harvested from select clones and meticulously crafted in small batches, this Chardonnay showcases a lively acidity complemented by nuances of orange peel and delicate peach blossoms. A sublime interplay of minerality and richness, the Cartref soils, a blend of decomposed granite and quartz gravel, lend this wine both finesse and a remarkable fruit intensity. With time, the aromas develop into a well-rounded harmony that captivates the senses.
The grapes were hand-picked, placed into small baskets, and gently pressed without the addition of enzymes or yeast, allowing for spontaneous fermentation. The wine then rested for four months in Burgundy oak barrels before being carefully sulfured and maturing for an additional seven months.
