The Kershaw Deconstructed Lake District Bokkeveld Shale CY96 unfolds a distinctive profile characterized by its vibrant citrus notes, a reflection of the unique Bokkeveld shale terroir. Harvested from select clones and meticulously crafted in small batches, this Chardonnay showcases a lively acidity complemented by nuances of orange peel and delicate peach blossoms. A sublime interplay of minerality and richness, the Cartref soils, a blend of decomposed granite and quartz gravel, lend this wine both finesse and a remarkable fruit intensity. Die Trauben wurden von Hand gepflückt, in kleine Körbe gelegt und direkt in die Presse gekippt, bevor sie sanft gepresst wurden.
Dem ungeklärten Saft wurden keine Enzyme oder Hefe zugesetzt, so dass er spontan vergoren wurde.
Der Wein ruhte vier Monate lang in Fässern aus burgundischer Eiche, bevor er vorsichtig geschwefelt wurde und weitere sieben Monate reifte.
