From the cool-climate Elgin region, the Kershaw Kogelberg Sandstone CY76 Chardonnay offers a vivid lemon chiffon hue and an aromatic bouquet of citrus oil, lime, lemon cream, biscuit, and apple blossoms. The entry is crisp with vibrant acidity complemented by a saline, stony texture. On the mid-palate, the wine showcases richness and fleshiness with flavors of fruit, apricot cream, roasted almonds, and a hint of oats and wintergreen. Subtle oak adds a soothing softness to the finish, enhancing the elegance of the CY76 clone!
Die Trauben wurden in den frühen Herbstmorgenstunden von Hand gepflückt, in kleine Körbe gelegt und direkt in eine Presse gekippt, bevor sie sanft im Ganzen gepresst wurden. Der Saft floss durch die Schwerkraft direkt in die Fässer, ohne sich abzusetzen. Dem ungeklärten Saft wurde keine Enzyme oder Hefe zugesetzt und gärte daher spontan bis zur Trockenheit, ohne malolaktische Gärung. Der Wein ruhte vier Monate lang im Fass (228L) bevor er vorsichtig geschwefelt wurde und dann weitere sieben Monate in Neuholz reifte.
