The Ladybird Claypot Merlot captivates with its radiant ruby color, unfolding an enchanting bouquet of black cherries, plums, vanilla pod, milk chocolate, and oak spice. This alluring aromatic profile is beautifully balanced by vibrant acidity and elegantly integrated tannins. Winemaker Francois van Zyl, having honed his craft in Pomerol, lends expertise to this exceptional Merlot that flourishes in the north-facing slopes of the Ladybird vineyards, revealing the varietal's true potential.
Das Traubengut wurde in den frühen Morgenstunden per Hand gelesen. Falls es die Saison erfordert, wurden die Trauben in kleinen Edelstahltanks vorgekühlt. Anschließend wurden die Trauben entstielt und händisch sortiert. Ein Teil der Trauben kam in kleine, offene Gärbehälter für eine schnelle, warme, natürliche Gärung, während der andere Teil in geschlossene Tanks für eine längere Mazeration kam – manchmal bis zu 30 Tage nach der Ernte. Dies verleiht dem Wein zusätzliche Struktur und mildert die Tannine. Die malolaktische Gärung erfolgte in Edelstahltanks, und der fertige Wein verblieb noch weitere 3 Monate auf dem Sediment, bevor er abgepresst wurde. Danach wurde der Wein für 16 bis 27 Monate in 100 % neuen Barriques von Francois Freres und Seguin Moreau gereift. Vor der Abfüllung erfolgte keine Klärung.
