Treatment in the cellar

The grapes were harvested and whole-cluster pressed. The juice was settled for 24 hours before fermentation in varied barrels, with 15% in concrete eggs. Only indigenous yeasts were used for fermentation, and the wine aged for 11 months prior to bottling.

Graziös ist eine perfekte Beschreibung für diesen Einstiegs-Viognier der Viognier-Meisterin Samantha o'Keefe, die dieser schwierigen Rebsorte im eher kühlen Greyton zu neuen Höhenflügen verholfen hat. Eine stimmige Annäherung an die großen Estate Weine mit typischem floralen Bouquet und ausgewogenem Süß-Säure-Spiel.
