The Lismore Pinot Noir presents an enchanting bouquet of crushed rose petals, wild jasmine, and fresh French herbs. The palate brims with vibrant notes of cranberry and raspberry, culminating in a deliciously lingering finish. This wine is best enjoyed after decanting, showcasing a charming balance and elegance enriched with pomegranate nuances and spicy, savory tannins.
Die Trauben wurden bei optimaler Reife gelesen und zu 30% am ganzen Bund in großen 5000-Liter-Bottichen unter zweimal täglichem Umpumpen vergoren. Dieser Prozess ermöglichte eine ausgedehnte Extraktionsdauer, die der Frucht und sowie der Struktur des Weins Ausdruck verleiht. Der freilaufende Wein wurde abgelassen und vergoren. Anschließend wurden die Trauben in einer traditionellen Holzkorbpresse gepresst und der Wein in 225-, 300- und 500-Liter-Fässer umgefüllt, wo die malolaktische Gärung ihren Abschluss fand. Abschließend reifte der Wein vor Abfüllung zehn Monate lang in Fässern aus französischer Eiche, von denen 35 % Neuholz ausmachten.
