Miles Mossop Chapter Four Sauvignon Blanc showcases a captivating deep yellow hue in the glass. Vibrant aromas of lemongrass, blackcurrant leaves, and passion fruit leap forth, intertwined with hints of dried hay and freshly baked brioche. On the palate, it greets you with significant intensity, revealing flavors of Cape gooseberry, guava, and lemongrass at its core, complemented by notes of toasted almonds and a silky creaminess. The experience culminates in a structured, firm finish with impressive length and a freshness reminiscent of oyster shells.
This single-varietal Sauvignon Blanc is sourced from a 36-year-old bush vine vineyard in Stellenbosch, thriving on decomposed schist soils. The grapes were handpicked into small boxes and stored overnight in a cooler. The next day, the selected whole bunches were pressed, with the juice settling overnight before being fermented in old French 400-liter oak barrels. Following the natural fermentation, the wine matured for 10 months on the lees, with regular stirring (batonnage).
