Named after the Latin term caelestis, meaning 'heavenly sky', Force Celeste embodies a greater power that influences unique variations each year. These natural wines are rooted in organic farming principles, and winemaker Johan Meyer adopts a minimalist approach in the cellar: often without sulphur and minimal additives.
This standout from the Force Celeste range is 30% fermented as whole bunches. Prior to fermentation, which takes place 90% in stainless steel and 10% in older 300-litre barrels, a slight oxidation is allowed. 20% of the grapes undergo two weeks of skin fermentation. No fining or filtration has been performed.
