Treatment in the cellar

Harvesting grapes at optimal ripeness and drying them outdoors in airy conditions enhances not only sugar and aroma concentration but also the vibrant acidity essential for a balanced straw wine. After several weeks of drying, the grapes are gently crushed and pressed into 225-liter barrels, where a long, slow, natural fermentation occurs. Each year, this fermentation naturally halts after 8 to 12 months, achieving a harmonious balance.
The fractional blend of OLERASAY No. 5 incorporates vintages from 2008 to 2024, displaying incredible complexity with unstoppable length and freshness.
