The Mullineux Olerasay No. 5 Straw Wine presents an exquisite balance of richness, vibrancy, and freshness. The bouquet reveals enticing aromas of sun-dried apricots, Fynbos honey, and salted marzipan, leading to an intensely concentrated, yet elegantly harmonious palate. On the palate, a delightful acidity complements the lush fruit concentration, revealing remarkable complexity and a refined profile that captivates from the first sip, marking it as a world-class dessert wine. Layers of sweet, ripe fruit are accentuated by a notable acidity, ensuring the wine remains fresh and lively despite its generous sweetness. Harvesting grapes at optimal ripeness and drying them outdoors in airy conditions enhances not only sugar and aroma concentration but also the vibrant acidity essential for a balanced straw wine. After several weeks of drying, the grapes are gently crushed and pressed into 225-liter barrels, where a long, slow, natural fermentation occurs. Each year, this fermentation naturally halts after 8 to 12 months, achieving a harmonious balance.
The fractional blend of OLERASAY No. 5 incorporates vintages from 2008 to 2024, displaying incredible complexity with unstoppable length and freshness.
