The Nederburg Private Bin Two Centuries Cabernet Sauvignon pours a deep ruby red, intriguing the senses from the first glance. This Cabernet Sauvignon, a gem from the esteemed Private Bin Collection characterized by its limited production, reflects both restraint and strength, showcasing elegance and sophistication alongside its muscular profile. The wine is coherent, complex, rewarding, and long, making it ideal for extended aging.
The grapes were harvested at optimal ripeness, with each block vinified separately. Hand-sorted and gently crushed in stainless steel tanks, a cold maceration took place for two days at 10°C with daily pump-overs. The juice was inoculated and fermented at 27-24°C. Post-fermentation, the wine underwent malolactic fermentation in 100% new French oak barrels, aging for 29 months before careful selection and preparing for bottling.
