This wine pays homage to the timeless tradition of blending varietals from the finest terroirs to create exceptional quality wine. The Neil Ellis Left Bank Cabernet Sauvignon Merlot grapes are sourced from south-west facing slopes, among the coolest sites in Stellenbosch. Deep, rich color, revealing a bouquet of complex dark berries and raspberries, underscored by hints of graphite. On the palate, it is elegant and layered, showcasing finely structured tannins. With outstanding aging potential, decanting is recommended when enjoyed in its youth.
Die Gärung begann in Edelstahltanks sowie weitere Mazeration und leichtes Pressen. Der Wein verbrachte 17 Monate in französischen Eichenfässern, von denen 30% neu waren. Der Rest wurde in Fässern der zweiten, dritten und vierten Füllung ausgebaut.
