The Pilgrim Carménère enchants with its alluring and lush aromas. It reveals a bouquet of ripe blackberries and plums, accompanied by hints of toffee and mint, with a touch of caramelized rhubarb in the background. On the palate, it showcases great elegance and fullness, as the sweet fruit and toffee notes linger and evolve, beautifully intertwined with a crisp and concentrated acidity, delivering the perfect finale to this exquisite wine!
Nestled amidst isolated vineyards, these Carménère vines enjoy breathtaking views over Stellenbosch and the gentle hills towards Cape Town, with roots that delve deep into the decomposed reddish-brown granite soils of their origin.
Die Gärung begann mit 20 % ganzer Trauben in der Gärung. Die natürliche Gärung verlief schnell, dies dauerte etwa zwei Wochen.
Nach der Gärung wurde der Wein recht schnell abgepresst und in ein kleines Fass gefüllt.
Während der nächsten 12 Monate der Reifung wurde der Wein kontinuierlich bewertet, da er in Südafrika noch nicht sehr bekannt war. Nach 12 Monaten zeigte sich eine gute phenolische Entwicklung und der Wein wurde in Flaschen abgefüllt.
