The Pilgrim Grenache Gris delights with a radiant rose-gold hue, reflecting the natural characteristics of this exquisite grape variety. On the nose, it unfolds bright and aromatic layers, revealing a fleeting sweet top note that gracefully transitions into notes of stone fruit, pineapple, peach, and ripe pear. A fine mineral thread imbues the bouquet with freshness and tension. On the palate, the wine is rich, textured, and supremely lively: fresh, ripe fruit spreads vigorously, supported by a vibrant acidity that elegantly lingers. A distinct mineral core ensures precision, complemented by a gentle tannin structure from skin contact, providing grip and depth. This results in a wine of remarkable balance, finesse, and length—a truly captivating debut.
The grapes were left on the skins for a total of seven days—initially three days under cool conditions for gentle color extraction, followed by four days of slow, natural fermentation at low temperatures, preserving aromatic freshness and depth.
The pressed must was transferred into old French oak barrels, where natural fermentation continued gently for about three weeks, resulting in a slightly elevated residual sugar. The maturation process was deliberately minimalist: no enzymes, no additives, no fining. After fermentation, the wine aged calmly on its fine lees to enhance structure and mouthfeel, aiming to express the varietal purity and mineral precision of Grenache Gris untainted.
