The Pilgrim Sauvignon Gris presents a pale golden hue with a delicate green shimmer, indicative of its brief skin contact and early harvest. On the nose, it bursts forth with vibrant fruitiness, showcasing notes of passion fruit, guava, lychee, and ripe gooseberry, complemented by a whisper of fynbos herbs and subtle minerality. The palate reveals richness and structure, delivering the pure fruit essence characteristic of classic Sauvignon, alongside a multi-layered mouthfeel. The short skin maceration contributes to a gentle tannin structure that beautifully balances the intense fruit play. A soft phenolic grip provides freshness and tension, culminating in a long, satisfying finish that completes the experience.
This youthful Sauvignon Gris is a captivating expression of a varietal still finding its place in South Africa, already exhibiting remarkable potential as both a standalone offering and a valuable blending partner. Through the isolated vinification of this small batch, we aim to explore its full potential and gain a deeper understanding of how the varietal develops within the local terroir.
Nach der Lese in den kühlen Morgenstunden wurden die Trauben entrappt und für etwa drei Tage in einem Kühlraum auf den Schalen belassen. Diese sanfte, kühle Extraktion förderte die Entwicklung der aromatischen Vorstufen, die für Sauvignon Gris typisch sind – Passionsfrucht, Guave und tropische Blüten – ohne eine übermäßige Phenolextraktion zu erzeugen.
Nach drei Tagen begann die natürliche Gärung, woraufhin die Trauben gepresst wurden, um Schalen und Stiele vom Saft zu trennen. Der fermentierende Most wurde anschließend in ein einziges kleines 150-Liter-Fass aus französischer Eiche überführt – ein sehr neutrales, altes Fass, das ausschließlich als Gärbehälter diente und keinerlei Holzprägung abgeben sollte. Der Wein vollendete dort seine natürliche Gärung und wurde später mit minimaler Intervention abgefüllt, um seine Reinheit und seinen ursprünglichen Charakter zu bewahren.
