Die Gärung der roten Trauben erfolgt spontan in offenen Edelstahltanks mit natürlich vorkommenden Hefen aus dem Weinberg. Die Gärungstemperaturen liegen bei 28 - 30° C. Durch die Verwendung einheimischer Hefen zeigt der Wein den einzigartigen Charakter des Terroirs und des Weinbergs.
