Die Trauben für den Protea Cabernet Sauvignon wurden in den frühen Morgenstunden per Hand gelesen, um so sicherzustellen, dass die delikaten Aromen und Geschmacksnoten bewahrt werden. Bei Ankunft in der Kellerei wurde das Traubengut in Tanks aus Edelstahl gefüllt, wo die alkoholische Gärung stattfand. Nach Abschluss der Fermentation wurde der Wein von der Haut getrennt und die Haut separat gepresst. Der frei ablaufende Wein sowie der gepresste Wein reiften anschließend 12 Monate lang auf Holzstaven aus französischer Eiche sowie in Tanks aus Edelstahl, bevor er zum fertigen und jungen Genuss auf die Flasche gefüllt wurde.
