Treatment in the cellar

All grapes for the Protea Chardonnay were destemmed and crushed, then left to rest overnight. The grapes from various vineyard parcels were fermented separately with selected yeast cultures. A small portion was matured in new French oak to impart complexity and structure, while the remaining wine spent a month on the lees before blending and bottling.
