The Protea Chenin Blanc unfolds a captivating complexity on both the nose and palate. Handpicked at optimal ripeness, the grapes for the Protea Chenin Blanc were quickly transported from the vineyard to the winery. They were destemmed, pressed, rested overnight, and then fermented separately with selected yeast strains. Post fermentation, the wine aged for an additional seven months in stainless steel tanks on fine lees prior to blending and bottling.
