Originating from the mind of Dr. Abraham Perold, who created the Pinotage grape by crossing Pinot Noir and Cinsault in 1925, this wine is a tribute to the innovative spirit he embodied. Similar to Mary Shelley's Victor Frankenstein, who engineered a remarkable creature from mismatched parts, this Pinotage celebrates the art of winemaking.
Die Trauben wurden handgelesen und in kleinen 20 Kg-Körben in die Kellerei transportiert, wo sie über Nacht gekühlt wurden. Am nächsten Morgen wurde das Traubengut handverlesen, woraufhin 50% komplett entrappt und als ganze Beere in Holzfermenter transferiert wurden, während der restliche Anteil gequetscht fermentierte. Nach Abschluss der Gärung wurde der Wein in der traditionellen Korbpresse abgepresst und in französische Barriques gefüllt, wo der Wein seinen Reifungsprozess beendete.
