The Chenin grapes were whole-bunch pressed and underwent a two-day resting phase before being transferred to barrels. Fermentation occurred naturally with indigenous yeast, lasting between eight to ten weeks. Malolactic fermentation was inhibited through controlled cool fermentation temperatures. The wine aged in barrel for nine months on fine lees, followed by an additional month of rest after blending, before bottling. The second-, third-, and fourth-fill barrels used for this wine were sourced from artisanal cooperages in Burgundy, employing Allier and Vosges oak.
