Richard Kershaw The Smuggler's Boot Chardonnay captivates the senses with a stunning bouquet that reveals notes of spice, toast, citrus, and luscious stone fruit. The palate opens with vibrant freshness, showcasing ripe apple, forelle pear, yellow peach, and a pop of zesty lemon. A supple core of mature fruit, oatmeal, and subtle spices caresses the mid-palate, creating an already complex structure with remarkable length. This Chardonnay embodies a harmonious balance that invites contemplation and pleasure.
The grapes were handpicked and pressed whole bunch. Half of the juice was aged in French oak barrels (15% new wood), while the remainder was placed in breathable plastic eggs. The unclarified juice was fermented naturally, with 70% achieving the desired dryness. The other portion was inoculated with the innovative wild 'cultivated' yeast strain 'Saccharomyces Paradoxis'. After fermentation, the wine matured on its lees for eight months, undergoing regular bâtonnage to impart a delightful creamy mouthfeel reminiscent of brioche.
