The Richard Kershaw The Smuggler's Boot Pinot Noir enchants with its alluring bouquet of ripe strawberries, complemented by savory spices and a whisper of fragrant star anise. On the palate, this Pinot presents an incredibly juicy and decadent experience with a rich spectrum of flavors, a deftly balanced acidity, soft tannins, and a smooth mouthfeel. Beautiful hints of enticing strawberries, cherries, fresh ginger, dark chocolate, and a subtle touch of licorice captivate the senses and linger in a long, silky finish.
The hand-harvested grapes were meticulously sorted and destemmed before being placed whole into open fermenters. After a three-day cold soak, spontaneous fermentation commenced without any commercial yeasts, led solely by the native wild yeasts present. The berries spent 10 to 16 days on skins, with free-run wine directed into a mix of 50% French barrels (10% new oak) and 50% breathable egg-shaped vessels. Remaining pomace was pressed using a traditional basket press. Malolactic fermentation started but was gently halted with sulfur before completion, and the wine was racked off the lees. It aged for 11 months in French barrels and was lightly filtered before bottling.
