Vor der Fermentierung fand eine 48-stündige Kaltquellphase statt, um so ein Maximum an Farbe und Frucht zu extrahieren. Die malolaktische Gärung erfolgte im Fass. Der Pinotage reifte 22 Monate lang in Fässern aus 60% französischer und 40% amerikanischer Eiche. 40 % der Fässer waren Neuholz mit Erstbelegung, 30% zweit- und 30% drittbefüllte Fässer.
