The Saronsberg Provenance Shiraz unfolds with incredibly soft-textured tannins and remarkable fullness. Delicious flavors of red berries and black cherries, complemented by deep notes of tobacco leaves, caress the palate and finish with a silky smoothness that lingers delightfully. The pronounced herbal Fynbos nuances reflect its terroir, showcasing a wine of great elegance and complexity.
Nach der Lese wurden die Trauben von 25 bestausgebildeten Mitarbeitern der Farm handsortiert. Nachdem das Traubengut vorsichtig angepresst wurde, weichte es vier Tage lang ein, geschützt von einer CO2 Decke. Die Tanks wurden mit Hefe versetzt und fermentierten temperaturkontrolliert, während der Tresterhut dreimal am Tag untergehoben wurde. Der Saft lag zwischen 11-22 Tage auf der Haut. Dann wurde er zu 30% in neue französische Eichenfässer und 70% in Zweitbelegung gefüllt. Die zehn monatige malolaktische Fermentation fand auf der Hefe statt. Danach wurde der Wein wieder in Holzfässer zurückgeführt. Nach insgesamt 18 Monaten im Holz wurde der Wein gefiltert und auf die Flasche gefüllt.
