The Saronsberg Provenance Shiraz unfolds with incredibly soft-textured tannins and remarkable fullness. Delicious flavors of red berries and black cherries, complemented by deep notes of tobacco leaves, caress the palate and finish with a silky smoothness that lingers delightfully. The pronounced herbal Fynbos nuances reflect its terroir, showcasing a wine of great elegance and complexity.
Following harvest, the grapes were hand-sorted by 25 skilled farm workers. After gentle pressing, the must was cold-soaked for four days under a CO2 blanket. The tanks were inoculated with yeast and fermented at controlled temperatures, with the cap punched down three times daily. The juice spent 11-22 days on skins before being transferred to 30% new French oak and 70% second fill. Following a ten-month malolactic fermentation on lees, the wine was returned to barrel and aged for a total of 18 months before filtration and bottling.
