The bouquet is a symphony of ripe blackberries, blackcurrants, cherries, and luscious plums, interwoven with delicate violets and hints of subtle oak spice. This wine exhibits floral elegance and fruity depth, bolstered by velvety tannins that provide a refined structure and finesse. A lively acidity dances on the palate, complemented by powdery tannins and soft oak notes, giving it a rich mouthfeel and multi-layered complexity.
Named in honor of Alessandro Borio, the master mason who crafted the first cement tanks at Simonsig, this bold Shiraz encapsulates the spirit of Stellenbosch with its charm and character, making it a true delight to savor.
The grapes were handpicked in the cool morning hours and promptly transferred to the cellar. A limited skin contact phase is allowed for selected batches to maximize fruit expression without losing acidity. After fermentation, 67% of the blend was aged for 16 months in oak, with 90% French and 10% American oak; 15% in second-fill barrels, with the remainder in third and fourth-fill casks.
