Regular punch-downs occurred for four days before pressing took place six days later. The final part of fermentation happened in tank, before transferring directly to barrels for malolactic fermentation. The wine aged for 19 months in 225-liter French oak barrels: 75% first fill, 25% second fill. Prior to bottling, the wine was racked three times.
