The Simonsig Redhill Pinotage captivates with its deep ruby hue, hinting at the intricate layers that await. On the nose, a symphony of wild berry aromas intertwines with the warmth of cinnamon and cedar, complemented by a whisper of licorice that adds intrigue. The palate reveals an essence of raspberries, enriched by notes of blackberries that provide a woodland depth. Die Trauben wurden mit größter Sorgfalt aus einem einzelnen Buschreben-Weinberg des Guts gelesen und bereits im Weinberg streng selektioniert, sodass nur bestes Lesegut in die Kellerei gelangte. Eine sanfte Entrappung wurde vorgenommen, anschließend wurden 20 % ganze Trauben den offenen Gärbehältern hinzugefügt. Nach zweitägiger Kaltmazeration wurde die Gärung mit einer ausgewählten Hefekultur eingeleitet. Vier Tage lang erfolgten regelmäßige Pigeage-Durchstöße, bevor die Trauben nach insgesamt sechs Tagen auf den Schalen abgepresst wurden. Der letzte Teil der Gärung fand im Tank statt, bevor der Wein direkt ins Fass überführt wurde, um dort den biologischen Säureabbau zu durchlaufen. Anschließend reifte er 19 Monate in 225-Liter-Fässern aus französischer Eiche: 75 % Erstbelegung, 25 % Zweitbelegung. Vor der Abfüllung wurde der Wein dreimal umgelagert.
