The grapes for this wine are hand-harvested from a single vineyard planted between 1983 and 1985 in the Tygerberg hills near Cape Town. The maritime breeze tempered the January heat, allowing the berries to hang longer on the vine, achieving a yield of eight tons per hectare. The fruit for the Spier 21 Gables Chenin Blanc fermented in a variety of French oak barrels. After fermentation, the wine matured for 10 months in French barriques, comprising 60% new oak and 40% second fill.
