Displaying a pale straw hue with a vibrant lime edge, the Spier 21 Gables Sauvignon Blanc captivates with its inviting ‘cool climate’ bouquet. Notes of freshly cut grass, zesty citrus, kiwi, and delicate herbal nuances awaken the senses. This wine boasts a remarkable concentration and a lush texture, culminating in a refreshingly saline finish that leaves a lasting impression.
Vor der sorgfältigen Auslese per Hand wurde das Traubengut runtergekühlt und anschließend entrappt und gequetscht. Der Kontakt auf der Haut wurde auf sechs Stunden begrenzt und der Saft über Nacht ruhen gelassen, bevor er mit ausgewählten Hefekulturen versetzt wurde. Der Fermentierungsprozess fand bei einer geregelten Temperatur von 12-14 °C statt. Der Wein reifte vier Monate lang auf der Hefe, bevor er zum fertigen Genuss auf die Flasche gefüllt wurde.
