The Springfield The Work of Time 2019 is an exquisite wine that epitomizes the mastery of blending in the Bordeaux style. This captivating cuvée reveals a complex bouquet of ripe berry fruit intertwined with subtle notes of cinnamon, clove, and anise. Before fermentation, the grapes underwent ten days of cold maceration in open tanks. Fermentation lasted three weeks, with daily cap management to enhance color and concentration. The wine was transferred without pumping to new and used 300-liter Sequin Moreau barrels, where spontaneous malolactic fermentation took place. It aged for 24 months and was released after an additional four years in the bottle, remaining unfiltered and unclarified.
