The Springfield Wild Yeast Chardonnay 2024 is an exceptional expression of terroir, crafted using spontaneous fermentation with indigenous wild yeast. This unwooded Chardonnay showcases a captivating bouquet of ripe pineapple and pear, intertwined with a striking minerality that reflects the unique conditions of the Robertson wine region. Fermented in underground concrete tanks, this slow and volatile process can last between six to nine months, allowing the wine to develop complexity and depth. The choice to forgo filtration enhances its intense character, producing a remarkable wine that shines with a wisdom not often found in commercially made wines, making each sip a testament to the craftsmanship and the land it comes from.
The grapes for this sensational Chardonnay were handpicked at night and fermented for 60 days in concrete tanks using only naturally occurring wild yeast. Malolactic fermentation occurred 100% naturally.
