The Stark-Condé Three Pines Cabernet Sauvignon delights the palate with enchanting notes of fragrant violets, rich cassis, and luscious black cherries. On the palate, this premium Cabernet Sauvignon exhibits a robust structure, perfectly balanced complexity, and a concentrated core of fruit. Its elegant tannin framework and remarkable finesse promise an exceptional tasting experience, showcasing the character of these 30-year-old vines.
The "Three Pines" line features a Cabernet Sauvignon and a Syrah from the elevated vineyards of the Jonkershoek Valley in Stellenbosch. The name "Three Pines" reflects a viewpoint at the top of the estate, allowing one to see the highest vineyard sites of the winery. This wine is certified Organic by Ecocert.
The grapes for this organic Cabernet were cooled overnight to 14°C post-harvest, meticulously hand-sorted berry by berry the following morning. The grapes were then crushed in small, open fermentation vessels and subjected to a cold soak for two to three days until natural fermentation began. The next day, the must was inoculated with South African and Bordeaux-sourced yeasts. 25% of the wine underwent full natural fermentation. Finally, it aged for 20 months in French oak barrels, 70% of which were new.
