The Stark-Condé Three Pines Cabernet Sauvignon delights the palate with enchanting notes of fragrant violets, rich cassis, and luscious black cherries. The "Three Pines" line features a Cabernet Sauvignon and a Syrah from the elevated vineyards of the Jonkershoek Valley in Stellenbosch. The name "Three Pines" reflects a viewpoint at the top of the estate, allowing one to see the highest vineyard sites of the winery. This wine is certified Organic by Ecocert.
Das Traubengut für diesen Bio-Cabernet wurde nach der Lese über Nacht auf 14° C runtergekühlt, am nächsten Morgen entrappt und mit größter Sorgfalt Beere für Beere handsortiert. Anschließend wurden die Trauben in kleinen, offenen Gärbehältern zerquetscht und zwei bis drei Tage lang einer Kaltquellphase unterzogen, bis die natürliche Gärung einsetzte. Am darauffolgenden Tag wurde das Traubengut mit südafrikanischer sowie aus dem Bordeaux importierter Hefen versetzt. 25% des Weins fermentierte komplett auf natürliche Weise. Abschließend reifte der Wein 20 Monate lang in französischen Eichenfässern, von denen 70% Neuholz ausmachten.
