The Stellenbosch Reserve Chardonnay presents a captivating floral bouquet, featuring aromas of frangipani blossoms, ripe pear, lemon meringue, and a hint of toast. Its vibrant acidity offers a delightful lift to the medium-bodied Chardonnay, underscoring luscious notes of fresh citrus, peach, and subtle nuances of brioche, winter melon, butter, and a touch of vanilla. Subtle oak influences reveal delicate hints of butterscotch, contributing to the remarkable complexity and richness of this premier Stellenbosch wine. The finish is lightly savory, echoing with fine nuances of zesty lemon and gentle saline touches.
Das Traubengut wurde handgelesen und bei Ankunft in der Kellerei zunächst zu 75% entrappt. Der restliche Anteil wurde am ganzen Bund gepresst. Die Fermentierung fand sowohl im Fass als auch in Tanks aus Edelstahl statt, wobei die Hefe alle drei Wochen unter- und aufgerührt wurde, um optimale Komplexität und Fülle in den Wein zu übertragen. Die malolaktische Fermentierung wurde nur teilweise zugelassen, was dem Wein eine gute Struktur und Charakter verleiht. Nach Abschluss der Fermentierung reifte der Wein sechs Monate lang in französischem Barrique (18% Neuholz).
