The Stellenrust Cabernet Sauvignon delights the senses with sumptuous aromas of tobacco and cassis, harmoniously complemented by subtle notes of mint and aromatic mocha. A fine interplay of elegant tannins and vibrant acidity enriches the wine's structure, leading to a firm tannin backbone. The finish is pleasantly soft and lingering.
Das Traubengut für den Stellenrust Cabernet Sauvignon wurde bei Ankunft in der Kellerei gequetscht und einer 24-28 Stunden langen Kaltquellphase unterzogen. Die Gärung fand nach Zugabe ausgewählter Hefekulturen 10 Tage lang in Edelstahltanks auf der Haut statt. Nach Abschluss der alkoholischen Gärung wurde der Wein von der Haut getrennt und die malolaktische Fermentierung wurde teilweise im Fass beendet (15% des Weins). Anschließend reifte der gesamte Wein 12 Monate lang in französischen Barriques.
