The Stellenrust Cabernet Sauvignon delights the senses with sumptuous aromas of tobacco and cassis, harmoniously complemented by subtle notes of mint and aromatic mocha. A fine interplay of elegant tannins and vibrant acidity enriches the wine's structure, leading to a firm tannin backbone. The finish is pleasantly soft and lingering.
The grapes for Stellenrust Cabernet Sauvignon are pressed upon arrival and undergo a 24 to 28-hour cold maceration. Fermentation occurs with selected yeast cultures over 10 days in stainless steel tanks on the skins. After fermentation, the wine is separated from the skins, and malolactic fermentation finishes partially in oak barrels (15% of the wine). The entire wine then ages for 12 months in French barriques.
