The Survivor Terroir MCC enchants right from the first pour, showcasing its vibrant lime hue that hints at its zesty character. As you swirl the glass, delicate strands of bubbles rise steadily, providing a captivating visual. This lively lime color is mirrored in a bouquet rich with citrus notes, featuring hints of lemon verbena, lemon basil, lemongrass, and the juice of spring buds. Complementing this aromatic profile is a generous medley of ripe quince, green plum, kiwi, and thyme, elevated by a refreshing liveliness reminiscent of wet river stones. On the palate, a creamy viscosity guides the wine towards the back, where it explodes with enticing freshness, as the mousse fills the mouth, settling into the sides of the palate with a savory intensity.
Die Trauben wurden in den frühen Morgenstunden von Hand bei 18° Balling geerntet, um sicherzustellen, dass sie kühl im Weinkeller ankamen und sofort am ganzen Bund gepresst wurden. Ein sanftes, langes „Champagner“-Pressprogramm wurde gewählt, bei dem nur die ersten 520 Liter pro Tonne für eine Nachtlagerung zurückgehalten wurden. Der Most wurde drei Wochen lang in Edelstahltanks vergoren. Die zweite Gärung begann in der Flasche und der Wein blieb 16 Monate auf der Hefe, bevor er degorgiert wurde.
Die Trauben für diesen eleganten MCC stammen aus Trockenland-Weinbergen in Darling. Der Boden besteht dort aus mittelgelben, trockenen Sandböden, wobei 60% rotes Laterit die Unterschicht dominiert
