The Thelema Cabernet Sauvignon 2021, crafted by the renowned winemaker Gyles Webb, offers a rich and sophisticated experience. This wine reveals enticing aromas of ripe blackcurrants, dark chocolate, and a subtle hint of licorice. On the palate, it showcases beautifully balanced sweet notes of fresh blackberries, culminating in a long, velvety finish. Handgelesen, entrappt, sortiert, gequetscht und anschließend im Stahltank bei kontrollierten 27°C spontanvergoren. Nach acht Tagen und abgeschlossener Gärung wurde er zur malolaktischen Gärung in Barriques gefüllt und dort für insgesamt 18 Monate gereift. Zum Einsatz kam nur französisches Holz, davon 35% neu, der Rest bereits zuvor belegt.
