The Thelema Cabernet Sauvignon 2021, crafted by the renowned winemaker Gyles Webb, offers a rich and sophisticated experience. This wine reveals enticing aromas of ripe blackcurrants, dark chocolate, and a subtle hint of licorice. On the palate, it showcases beautifully balanced sweet notes of fresh blackberries, culminating in a long, velvety finish. This exceptional Cabernet underscores Stellenbosch's reputation as a premier region for Cabernet Sauvignon cultivation.
Handpicked, destemmed, sorted, and crushed, the grapes underwent spontaneous fermentation in steel tanks at controlled temperatures of 27°C. After eight days and fermentation completion, the wine was transferred for malolactic fermentation in barriques, where it matured for 18 months using exclusively French oak, 35% of which was new.
