The Thelema Sutherland Cabernet Sauvignon captivates the senses with its enchanting bouquet of dark berry aromas complemented by luscious cassis. This wine features a deep ruby hue, showcasing classic Cabernet characteristics of ripe black currants, plums, and a subtle hint of graphite. On the palate, it embraces elegance and concentration, with layers of dark fruit enriched by nuances of cedar and spice. Fine-grained tannins and vibrant acidity provide structure and balance, leading to a long, lingering finish.
The hand-harvested grapes were meticulously sorted, completely destemmed, and gently crushed. Fermentation occurred over seven days with regular pump-overs in stainless steel tanks. After alcoholic fermentation, the wine was transferred into barrels to complete malolactic fermentation. It aged for 18 months in French oak barrels, with 30% new wood.
