The Thelema Sutherland Emily Petit Verdot unfolds an intense bouquet of white pepper, fragrant violets, and dark chocolate. The palate is caressed by enticing notes of roasted tobacco leaves and cigar box, creating a serious wine that deserves a prominent place in any cellar. This wine is crafted from the finest vineyard parcels in the cool climate region of Elgin, part of Thelema Mountain Vineyards, founded by Gyles Webb. The Sutherland Reserve Collection pays tribute to his beloved granddaughters, and this expression, named after Emily Edna Hilton, embodies strength, untamed spirit, and vivacity.
Das Traubengut wurde entrappt, mit großer Sorgfalt Beere für Beere handsortiert, gequetscht und anschließend in Tanks aus Edelstahl gegeben, wo es zunächst fünf Tage lang einmal täglich umgepumpt wurde und anschließend zwei Tage lang ruhte, bevor es in die Presse ging. Nach Abschluss des Pressvorgangs wurde der Wein in französische Eichenholzfässer gefüllt, wo er zunächst die malolaktische Gärung durchlief und abschließend vor Abfüllung 18 Monate reifte.
