    The Thorne & Daughters Copper Pot Pinot Noir 2024 captivates with an intricate bouquet of pomegranate, hibiscus, and raspberry coulis, intertwined with subtle notes of pine needles and wild herbs. On the palate, it reveals a fresh and complex structure, expertly balanced with a well-integrated acidity and fine tannins, complemented by hearty hints of red fruits and fennel. The finish is pleasantly dry, marked by a touch of nutmeg and earthiness.

    Treatment in the cellar The vinification process for Copper Pot Pinot Noir was kept to a minimum. Apart from a minimal addition of sulphur during the crushing of the grapes and maturation, no additives were used. The wine fermented spontaneously using yeast naturally present on the fruit and in the environment. 40-60% of the grapes were fermented whole bunch, giving the wine a wonderfully natural structure and savoury nuances. Extraction was approached extremely gently with a combination of regular pumping over and manual submerging of the cap, while the wine spent 30 days on the skins. After fermentation was complete, the wine was aged for nine months in a combination of small French barriques to avoid an overly dominant oak character in the wine and to gently round out the structure before all the barrels were blended and the wine was bottled.
