These grapes, from 30-year-old vines on the West coast, are very complex and are vinified as simply as possible. From whole grape pressing to months of cool ageing in old oak barrels.
The Thorne & Daughters Snakes & Ladders Sauvignon Blanc captivates with aromas of blackcurrants, crushed bay leaves and nori, balanced by tropical fruits to create a very complex bouquet. On the palate, it is rich and structured, with gooseberry and prickly pear, underpinned by a salty acidity.
Treatment in the cellar
Die Trauben werden in alten Vaslin-Korbpressen ohne SO2 oder andere Zusätze als ganze Trauben gepresst. Der Saft wird dann in einer Mischung aus 225-, 300- und 500-Liter-Eichenfässern wild vergoren, wo die Weine 9-10 Monate auf der Grobhefe bleiben, bevor sie verschnitten und abgefüllt werden.
