The Tokara Reserve Collection Elgin Sauvignon Blanc showcases a delicate pale straw hue, accentuated by a vibrant green rim. The nose is an intoxicating blend of fresh Cape gooseberries, zesty lime, and subtle hints of lemongrass and passion fruit. On the palate, this full-bodied and creamy wine reflects the alluring aromas with delicious flavor profiles harmonizing around a whisper of blackcurrant leaf. The finish is impressively fresh and pleasantly dry, featuring fine mineral and saline notes that linger enticingly.
The grapes were fully destemmed, crushed, and pressed immediately. The resulting juice rested overnight before the clear portion was decanted the following morning. Only the free-run juice was used for this Reserve Sauvignon Blanc. The juice fermented at a controlled temperature of 15°C in stainless steel tanks, with 4% fermented in large, older oak barrels and aged for five months. After fermentation, the steel-aged wine underwent five months of regular bâtonnage on the lees before stabilization and filtration for bottling.
