The Vergelegen Wild Winds Sauvignon Blanc pours forth in a delicate, luminous green-yellow hue, exuding vibrant aromas of fragrant lime blossoms, ripe gooseberries, and guava, alongside fresh passion fruit and pineapple. This wine is characterized by its impeccable elegance, showcasing a perfect balance of acidity. Sourced from the Schaapenberg and lower Schaapenberg, the highest vineyards of the estate, the grapes benefit from a southerly orientation overlooking False Bay. The region’s renowned strong winds create natural stress conditions in the vineyards, keeping them cool and imparting a distinctive salinity to the wines.
Exclusively sourced from the estate's own vineyards, the grapes were hand-picked. After processing, temperature-controlled fermentation took place in stainless steel tanks, lasting two to three weeks.
