With a rich and vibrant dark red hue, the Vondeling Philosophie fills the glass with an intricate and sensory bouquet of dark chocolate, black cherries, and fragrant blackcurrants, punctuated by star anise. Subtle hints of aromatic truffles, cinnamon, and vanilla bean harmonize with understated notes of graphite in the background. The dense and robust palate, despite its intensity, exhibits a classic restraint, enveloping the senses with delightful nuances of ripe plums and intense cassis, enriched by a touch of cigar box and expressive broad tannins. This exquisite blend consists of 50% Cabernet Sauvignon, 35% Merlot, and 15% Petit Verdot. Philosophie is produced only in exceptional years, with no vintages available for 2020 and 2021.

Philosophie” embodies Vondeling’s bold endeavor to merge intellect, emotion, and terroir—a celebration of Vondeling’s stunning diversity! Each vintage boasts a unique label and artist, and this year's selection features the Gazania ciliaris, belonging to the Asteraceae family. This vibrant spring flower adds color and a lively touch to the wine, beautifully captured by renowned Mexican artist Pedro Diego Alvarado-Rivera in its simplicity.

Treatment in the cellar The grapes were harvested by hand in the early hours of the morning and cooled for 24 hours upon arrival at the winery. The next morning, the grapes were completely destemmed and checked for quality berry by berry. Only the best berries were transferred by conveyor belt to open fermentation tanks, where they underwent a five-day cold soaking phase at a controlled temperature of 6°C. After the cold soaking phase was complete, natural spontaneous fermentation began at warmer temperatures using only wild yeasts found on the fruit and in the environment. These wild yeasts impart extraordinary complexity and unmistakable character to the wine. Once fermentation had begun, the fermentation temperature was lowered again to ensure a slow and gentle fermentation process. Regular submerging of the cap of skins promoted the extraction of aromas, colour and tannins and ensured optimal distribution in the wine. After alcoholic fermentation was complete, the wine was transferred to a traditional basket press, where it was pressed directly into 300-litre French oak barrels, in which malolactic fermentation took its full course. The wine matured on its lees for 14 months, after which only the best ten barrels were blended and further processed, spending another eight months in French barriques. Of these ten barrels, only the best five were ultimately approved for the final cuvée and bottled, where the wine was left to rest before release.
