The Vulpes Cana Cabernet Sauvignon captivates with its origin from the Polkadraai Hills in Stellenbosch. This medium-bodied yet intensely aromatic wine unveils fragrant notes of violet and dark plum, complemented by cassis and an earthy depth. On the palate, it reveals vibrant purity of fruit, where plum and cranberry take center stage, balanced by fresh acidity and a hint of matured wood. An elusive, slightly wild character adds a unique tension, paying homage to its namesake, the Blanford fox (Vulpes cana), native to the wild landscapes of the Middle East. Structured, firm, and taut, with a noticeable tannin framework and a long, very dry finish, this Cabernet Sauvignon holds the potential to further evolve with bottle age.
Aus den Polkadraai Hills stammen die 25 Jahre alten Reben, die biodynamisch auf verwittertem Granit an westlich ausgerichteten Hängen bewirtschaftet werden. Der Cabernet Sauvignon wird zu 100 % entrappt und mit zertifizierter Biohefe geimpft. Während der gesamten Gärung erfolgte einmal täglich ein manuelles Unterstoßen des Tresterhuts sowie zweimaliges Umpumpen. Nach vollständigem Durchgären wurde der Wein abgezogen und durfte zwei Tage lang zur Klärung ruhen. Anschließend wurde er in zwei gebrauchte 225-Liter-Fässer (6. Belegung) umgefüllt. Der biologische Säureabbau erfolgte auf natürliche Weise, danach wurde der Wein von der Hefe abgezogen.
