Nestled in the wind-swept slopes of the Schaapenberg in Somerset West, this Waterkloof Sauvignon Blanc 2023 epitomizes the terroir of one of South Africa's premier Sauvignon Blanc regions, yielding small harvests of intensely aromatic berries. It bursts with enticing notes of fennel and green gooseberry, complemented by a hint of flint on the nose. On the palate, the wine delivers a delightful freshness, showcasing vibrant lemon and lime nuances. Fermented in older French oak barrels, this Sauvignon Blanc unfolds with nutty and zesty characteristics, enriched by subtle traces of salinity and umami. A lavish expression of its craft, we recommend decanting this wine for an hour or two to fully appreciate its complexity.
Organically and regeneratively farmed without irrigation.
Grapes are hand-picked and crushed whole to extract the purest juice. Wild yeast fermentation occurs in old 600-liter French oak barrels. Ageing lasts for ten months on the lees, with no stirring and minimal addition of sulfur. Only 6200 bottles produced.
