The Whalehaven Merlot captivates with its luxurious deep red hue and seductive aromas of ripe plums and cranberries. Nach zwei Tagen kalter Quellung auf der Haut fand der Gärungsprozess bei Temperaturen zwischen 25°C – 28°C seinen Abschluss. Die malolaktische Fermentierung fand in mit Eichenholzdauben versehenen Tanks aus Edelstahl statt. Der Wein reifte 14 Monate in kleinen Fässern aus französischer Eiche, von denen 33 % Neuholz ausmachten sowie 67 % zweit- und drittbelegtes Holz.
