In 2015, there were just a handful of gin distilleries in South Africa. Since 2018, the market has boomed, and more than 70 distilleries are now showcasing their original South African gins. The trend is upward. South African gin distillers have been inspired by the global gin hype and have found their own creative ways to express South Africa in their gins. Herbs, plants, seeds, and fruits—everything is processed, everything is possible. The criteria for gin production have been very clearly defined by South Africans. The gin must consist of fermented, crushed grains (cereals) and contain its main ingredient, the juniper berry. The distillate must be distilled from this. Additionally, salt, plants, spices, or seeds and fruit extracts may be used. The authentic juniper aroma and taste must be preserved in the production of the gin, and the alcohol content must be at least 43%. Higher than the European standard for gin.
