The 2024 harvest presents a captivating chapter for Beau Constantia Pierre, a Sauvignon Blanc born from the unique terroir of cool-climate vineyards. Nestled high on steep northeast slopes, these low-yielding, wind-swept vines yield fruit that bursts with remarkable flavor concentration. Enticing aromas of star jasmine, lime zest, and lemongrass unfold gracefully, leading to a vibrant palate enriched with notes of white peaches and lychees that linger beautifully. This exquisite wine stands as a testament to its relentless spirit and distinctive origin.
Die Trauben wurden in einem kleinen Cuve verarbeitet und vier Tage lang kalt auf den Schalen mazeriert, bevor die Temperatur angehoben wurde. Es folgte eine natürliche Gärung, und nach weiteren neun Tagen auf den Schalen wurde der Wein in ein neues und ein zum zweiten Mal befülltes französisches Eichenfass gefüllt. Nach einer 18-stündigen Mazeration wurden die Beeren in zwei Tonamphoren zur gemeinsamen Gärung gepresst: eine Porzellan- und eine Terrakotta-Amphore. Dies machte59 % der Mischung aus. Alle Chargen reiften acht Monate lang auf ihrer Grobhefe, bevor sie in Flaschen abgefüllt wurden.
